Banana Oatmeal Cookies
🍌 Healthy Banana Oatmeal Cookies - soft, chewy, and full of flavor! 🍪🍯
Ingredients
- 2 ripe bananas, mashed
 - 1 1/2 cups rolled oats
 - 1/4 cup almond butter (or peanut butter)
 - 1/4 cup honey or maple syrup
 - 1/2 tsp vanilla extract
 - 1/4 tsp ground cinnamon
 - 1/4 tsp salt
 - 1/4 cup dark chocolate chips (optional)
 
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
 - In a large mixing bowl, mash the ripe bananas until smooth.
 - Stir in the almond butter, honey (or maple syrup), vanilla extract, cinnamon, and salt until well combined.
 - Add the rolled oats and mix until everything is evenly incorporated. If desired, fold in the dark chocolate chips.
 - Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
 - Bake for 10-12 minutes, or until the edges are golden brown.
 - Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
