  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Stir in the almond butter, honey (or maple syrup), vanilla extract, cinnamon, and salt until well combined.
  4. Add the rolled oats and mix until everything is evenly incorporated. If desired, fold in the dark chocolate chips.
  5. Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
  6. Bake for 10-12 minutes, or until the edges are golden brown.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
