Cheesecake Stuffed Chocolate Chip Cookies
Ingredients
For the Cookie Dough
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, melted
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 tbsp vanilla extract
- 1 egg
- 1 egg yolk
- 2 cups chocolate chips
For the Cheesecake Filling
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 tsp vanilla extract
Instructions
- Preheat Oven
- Preheat oven to 325°F (165°C) and line cookie sheets with parchment paper.
- Prepare Cookie Dough
- Whisk dry ingredients.
- In a separate bowl, cream butter and sugars.
- Beat in vanilla, egg, and egg yolk.
- Mix in dry ingredients, then stir in chocolate chips.
- Make Cheesecake Filling
- Beat softened cream cheese with sugar and vanilla until smooth.
- Assemble Cookies
- Form cookie dough balls, make a hole in the center, fill with cheesecake mixture, and cover with more dough.
- Bake
- Bake for 15-18 minutes. Cool on cookie sheets for 5 minutes before transferring to a wire rack.
