Chicken Salad Sandwich
Ingredients
- 2 cups cooked chicken, shredded or diced
 - 1/2 cup dried cherries, sliced
 - 1/3 cup sliced almonds
 - 1/2 cup celery, finely chopped
 - 1/4 cup mayonnaise
 - 1 tablespoon apple cider vinegar
 - 1 teaspoon honey
 - Salt and pepper to taste
 - 4 sandwich rolls or slices of bread
 - Optional: lettuce leaves for serving
 
Instructions
- In a large bowl, combine the chicken, dried cherries, sliced almonds, and celery.
 - In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper to create the dressing.
 - Pour the dressing over the chicken mixture and stir until evenly coated.
 - Taste and adjust seasoning if needed.
 - Serve the chicken salad on sandwich rolls or bread, optionally adding lettuce leaves for extra crunch.

An attempt to replicate one of our favorite chicken salad sandwich recipes from a campsite visited by the parents. Fed a basic description into Github Copilot as a basis.
Possible research idea: In “Salt, Fat, Acid, and Heat” book, look for a “bright cabbage slaw” recipe. I really think it’s some sort of acid I’m missing the the ingredients above
